Black Bean Pasta

I bought this black bean pasta ($2.99) at Trader Joe’s last weekend because it was a new item and I thought it looked interesting. It is gluten free and the only ingredient is black bean flour. When we were at the store, I talked to a couple of people who had tried it. Some said that it tasted like black beans, and others said the black bean flavor was minimal.

Another thing I wondered was whether or not the pasta would stay black when I cooked it. We usually buy the Vegetable Radiatore pasta (also from Trader Joe’s), and the colors always fade when I cook it. I took before and after pictures to show that the black bean pasta DOES stay black.

As soon as the pasta started boiling, it smelled like black beans. I cooked it as directed (I think it was about 8 or 9 minutes), and then took a scoop of them out and mixed them with a little olive oil and salt. To me, they tasted exactly like black beans. I like black beans, but I thought the texture was a little bit mushy at first. I put the pasta in a container in the fridge, and used some for Saffy’s lunch and my lunch this week. The second time I tried it (a few days later) I added some tomato sauce, cheese, and cherry tomatoes. By this time it did not taste mushy. I think it is because pasta tends to dry out a little bit in the fridge, and in this case it totally helped. Saffy also told me that when she ate the pasta in her lunch at school it was not mushy.

I think this pasta would be good with diced pepper, shredded cheese, and and a little sour cream (think Mexican toppings), but I also enjoyed it with tomato sauce.
